Carrot Soup with Feta Cheese Cream Recipe

Total Time: 30 minutes

Ingredients

• 4 potatoes

• 500 grams carrots

• 1 brown onion

• 1 clove garlic

• 2 tbsp olive oil

• 1 litre water

• 2 cubes vegetable stock

• 1 tsp salt

• Pinch of pepper

• Feta Cheese Cream

• 150 grams feta cheese

• 1 cup crème fraiche

• 1/2 lemon juice

• 1 tsp lemon zest

• pepper

Method

1. Peel the potato, carrots, onion and garlic. Cut the potato, carrot and onion into cubes.

2. In a medium heated saucepan, add the oil and sauté the onion until golden. Add the diced up potato and carrot. Add water, stock cubes, salt and pepper. Let simmer for 20 minutes.

3. With an electric stick mixer or food processor, blend the soup until entirely smooth.

4. Mix together all the ingredients for the feta cheese cream and drizzle it on top of the carrot soup to serve.

 

This soup offers a sweet flavour that marries together with the mildness of the feta cheese cream drizzled on top of the soup.

The vegetable carrot is a slightly sweet vegetable that has numerous of health benefits such as lowered cholesterol health, boosted vitamin A intake and potential improved eye health.

The carrot it self offers a very low carb diet as it is made up of approx.. 85% of water and the carbs are mostly made up out of starch and glucose.
