• 1 Ruby red grapefruit
• 1/2 banana
• 2 cups frozen pineapple chunks
• 1/3 cup Greek yogurt
• 1 Tablespoon coconut oil
• 1/4 inch knob of fresh ginger
For Topping: grapefruit segments, mint, berries and granola
1. Peel and segment the grapefruit over a bowl to collect the juice. Reserve 2 segments for the beverage topping. Blend grapefruit segments, grapefruit juice, frozen pineapple, Greek yogurt, coconut oil and fresh ginger using a high powered blender until smooth. Taste and adjust flavor to your preference. If concoction is too thick you can add some non-dairy milk.
2. Pour into 2 glasses or serve in a bowl with your favorite toppings.
