Ingredients
• 8 small firm potatoes
• 3 tbsp Olive Oil
• 1 tsp Salt
• ¼ cup chopped hazelnuts
• 2 Spring Onions
• ½ Lemon
• Small bunch Fresh Herbs
Method
1. Brush the potatoes clean and boil them in salty water ca 10-15 minutes. Pour the water out and rinse in cold water to cool them gently.
2. Place out all the potatoes on a baking tray and smash down each potato with the help of a spoon or something flat. Only smash them half way down so that they do not break apart entirely.
3. Chop up the spring onion, nuts and fresh herbs. Drizzle the potatoes with olive oil and a bit of salt and top with the chopped up mixture.
4. Bake in the oven for roughly 20-25 minutes.
Optional if you want to make your potatoes EXTRA fancy: top with a dollop of Greek yogurt and some crispy bacon bits to those of you who are not vegetarian.
