Stuffed Capsicums Recipe

Stuffed Capsicums Recipe

Total Time: 30 minutes

Ingredients

• 4 Large red Capsicums

• 1 brown onion

• 2 cloves garlic

• ½ Zucchini

• 2 Tomatoes

• ½ block of Feta cheese

• 1 bunch of parsley

• 1 can of mixed beans

• 2 tbsp Pine nuts

• 1 tbs Olive oil

• 1/2 Lemon

• Mozzarella cheese

• Salt & Pepper

• 1 pinch ground chilli

• 1 tbs ground Paprika

 

Method

1. Preheat oven to 200 degrees Celsius.

2. Cut the tops of all capsicums off and de-seed them.

3. Prepare the filling by chopping up all ingredients finely. Including onion, garlic, zucchini, tomatoes, feta and parsley.

4. In a saucepan on medium heat, toss all chopped up ingredients together in the olive oil.

5. Add pine nuts, can of mixed beans, the rind + juice of ½ lemon, salt, pepper, a pinch of ground chilli and paprika.

6. Cook until all ingredients and spices are combined and then stuff filling into hollow capsicums.

7. Sprinkle the mozzarella cheese on top and bake in oven for roughly 10-12 minutes.

 

A vegetarian flavour sensation – full with nutrients and good fats!
