Vegetarian Quinoa Balls with Mint Yogurt Recipe

Total Time: 1.5 hours

Ingredients

  • 1 ½ cups Quinoa
  • 1 Lime
  • 1 red Chili (finely chopped)
  • 1 clove Garlic
  • 1 bunch fresh coriander
  • Salt & Pepper
  • ¼ of a cup Oats
  • 4/5 cups rice flour

Mint – Yogurt

  • ½ cup Greek Yogurt
  • 5 leaves Fresh Mint (finely chopped)
  • Lime juice + zest
  • Salt & Pepper

 

Method

  1. Boil the quinoa for roughly 15 minutes or until grains are soft. Let cool.
  2. Turn the oven on 200°C. In a bowl mix the quinoa, lime juice, lime zest, chopped chili, coriander, finely chopped garlic, and a pinch of salt and pepper. Mix together with spoon and place in fridge for 15-30 minutes.
  3. With help of a spoon, form small quinoa balls, approx. 2cm in diameter and place them all on a baking tray. Place in oven for 15-20 minutes or until golden.
  4. Mint-Yogurt: Mix all ingredients in a bowl and place in fridge until ready for serving.
