Ingredients
- 1 ½ cups Quinoa
- 1 Lime
- 1 red Chili (finely chopped)
- 1 clove Garlic
- 1 bunch fresh coriander
- Salt & Pepper
- ¼ of a cup Oats
- 4/5 cups rice flour
Mint – Yogurt
- ½ cup Greek Yogurt
- 5 leaves Fresh Mint (finely chopped)
- Lime juice + zest
- Salt & Pepper
Method
- Boil the quinoa for roughly 15 minutes or until grains are soft. Let cool.
- Turn the oven on 200°C. In a bowl mix the quinoa, lime juice, lime zest, chopped chili, coriander, finely chopped garlic, and a pinch of salt and pepper. Mix together with spoon and place in fridge for 15-30 minutes.
- With help of a spoon, form small quinoa balls, approx. 2cm in diameter and place them all on a baking tray. Place in oven for 15-20 minutes or until golden.
- Mint-Yogurt: Mix all ingredients in a bowl and place in fridge until ready for serving.
