Zucchini Fritters Recipe

Zucchini Fritters Recipe

Total Time: 30 minutes

Ingredients

• 3 grated Zucchinis

• ¼ cup Parmesan

• 2 chopped Garlics

• ½ chopped Red onion

• ½ cup of Spelt flour OR Almond meal if keto or gluten intolerant

• 1 egg

• 1 Lemon cut into wedges

• Salt, pepper, herbs of choice (chives & basil work great together)

 

Method

1. Mix all ingredients together in a bowl, form round flat patties and shallow fry in a pan with coconut oil, olive oil or ghee.

2. Oven baking these fritters is a great option for reduced fat content.

 

A vegetarian option filled with fiber to keep your gut happy, healthy and constipation free!
