Plant Based Vegan Mince Recipe

Total Time: 20 – 30 minutes

Ingredients

• 500 g cauliflower

• 1 can lentils

• 1 medium brown onion

• 1 carrot

• 140 g tomato paste

• 1 tbsp olive oil

• 1 tbsp soy sauce

• 1 tsp paprika spice

• 1 tsp salt

• Pinch white pepper

• Pinch chili flakes

Method

1. Pulse the cauliflower, carrot and onion in a large food processor or individually in a mini mixer. Blend for at least 1 minute or until all the vegetables are finely chopped.

2. Heat a large frying pan up to a medium – high heat and add in the olive oil. Put the blended up vegetables in the pan and cook for 6-10 minutes until all water released from vegetables has evaporated.

3. Strain the can on lentils and add to the frying pan mixture. Also add the spices and cook for another few minutes until it forms some colour. Ready! You can use this mince for *vegan taco meat, *vegan spaghetti bolognese, *vegan burgers or a *vegan chili.
