Summer Gazpacho Recipe (Cold Soup)

Total Time: 10 Minutes

Ingredients

• 1/2 brown onion

• 1 garlic clove

• 1/2 fresh red chili

• 6 ripe tomatoes

• 1 1/2 red capsicums

• 1/2 cucumber

• 1 tsp honey

• 1 tbs olive oil

• a couple fresh basil leaves

• salt and pepper for seasoning

Method

1. Finely chop up the onion, chili and garlic and roughly chop up the remainder of the vegetables.

2. Place every ingredient in a mixer and blend until a smooth soup.

3. Taste with salt and pepper as you have finished blending it.
