Vegan Mexican Salad Bowl Recipe

Total Time: 30 Minutes

Ingredients:

• 1 cup Quinoa

• 1 cob of Corn

• 1 bunch or packet of cherry Tomatoes

• ½ large cucumber or 1 small

• 1/3 cup Black beans

• ¼ Red cabbage head

• ½ Red onion

• 1 Avocado

• ½ Chili, red

• 1 small bunch Coriander

• 1 Lime

• Olive Oil

• 1 tsp Paprika spice

• Salt and Pepper

• Corn chips

Method

1. Prepare the quinoa by putting twice as much water in a saucepan with the quinoa grains and 1 tsp salt. Bring to a boil and then reduce heat to let simmer until completely cooked through, this step takes approx. 20 minutes.

2. Whilst your quinoa is cooking, prepare your corn on the cob by rubbing it in Olive oil and then after rubbing a little bit of salt, pepper and paprika spice over it. Bake the cob in the oven for 20 minutes on 200 degrees Celsius.

3. Chop up the tomatoes, red onion, cucumber, red cabbage, avocado and coriander up and place in a bowl.

4. In a separate bowl, mix the olive oil, chopped up red chili, coriander, squeezed lime juice and salt and pepper.

5. Once the quinoa and corn is done, combine this with the rest of the salad and mix through the dressing.
