Gazpacho is a cold soup that is made up of raw vegetables blended to a fine soup. Red tomatoes is its main ingredient which is a vegetable high in antioxidants – specifically carotenoids and lycopene which are known to help prevent prostate cancer, high blood pressure, and eye problems. As it is made up of raw ingredients it has greater nutrient contents than a soup that would to be cooked and can also really enhance and boost digestive system due to its high fiber content.
